Creamy Spinach and Mushroom Lasagna
Ingredients:
	•	Filling: 2 tbsp olive oil, 1 diced onion, 3 minced garlic cloves, 10 oz sliced mushrooms, 10 oz chopped spinach, ½ tsp salt, ¼ tsp black pepper, ½ tsp oregano, ½ tsp basil.
	•	Sauce: 2 tbsp butter, 2 tbsp flour, 2 cups heavy cream, ½ tsp salt, ¼ tsp black pepper, ½ tsp nutmeg (optional).
	•	Assembly: 12 lasagna noodles (cooked), 2 cups ricotta, 1 egg, 1 ½ cups mozzarella, ½ cup Parmesan.
Instructions:
	1.	Prepare Filling: Sauté onion in olive oil, add garlic, mushrooms, and spinach. Season and cook until soft.
	2.	Make Sauce: Melt butter, whisk in flour, then gradually add cream. Season and thicken.
	3.	Assemble: Layer sauce, noodles, ricotta, spinach-mushroom mix, and mozzarella. Repeat, finishing with sauce and cheese.
	4.	Bake: Cover and bake at 180°C (350°F) for 30 min. Uncover and bake 10-15 min more.
	5.	Serve: Let rest 10 min before slicing. Enjoy!
