Roasted Beet & Carrot Salad with Creamy Burrata

A vibrant, earthy salad with sweet roasted veggies, creamy burrata, and a drizzle of balsamic glaze—perfect for any occasion!

Ingredients:

2 medium red beets, roasted & sliced

2 medium golden beets, roasted & sliced

2 medium carrots, roasted & sliced

1 ball of burrata cheese

2 cups arugula or mixed greens

¼ cup toasted walnuts

2 tbsp balsamic glaze

1 tbsp olive oil

Salt & black pepper, to taste

Instructions:

1️⃣ Roast the veggies – Preheat your oven to 400°F (200°C). Wrap beets and carrots in foil, drizzle with olive oil, and roast for 40-50 minutes until fork-tender. Let them cool, then peel and slice.

2️⃣ Assemble the salad – Spread the arugula or mixed greens on a serving platter, then arrange the sliced beets and carrots on top.

3️⃣ Add burrata & crunch – Place the burrata in the center and scatter the toasted walnuts for extra texture.

4️⃣ Finish & serve – Drizzle with balsamic glaze and a bit of olive oil. Sprinkle with salt and black pepper to taste. Serve immediately and enjoy!
