Thai Curry Chicken Skewers with Coconut Peanut Sauce

Ingredients:

For the Chicken Skewers:

1 lb chicken breast or thighs, cut into cubes

3 tbsp Thai red curry paste

2 tbsp coconut milk

2 tbsp fish sauce

1 tbsp brown sugar

Zest of 1 lime

Juice of 1 lime

Wooden skewers (soaked in water for 30 minutes)

For the Coconut Peanut Sauce:

1 cup peanut butter (smooth or chunky)

1 cup coconut milk

1 tbsp soy sauce

1 tbsp fish sauce

Juice of 1 lime

1 tsp Thai red curry paste

1 tsp honey or brown sugar

Optional: chili flakes for spice

Directions:

1. Marinate the Chicken:
In a large bowl, combine curry paste, coconut milk, fish sauce, brown sugar, lime zest, and lime juice. Toss chicken cubes in the marinade until evenly coated. Cover and refrigerate for at least 1 hour or overnight for better flavor.

2. Prepare the Sauce:
In a small saucepan, gently heat the peanut butter, coconut milk, soy sauce, fish sauce, lime juice, curry paste, and honey. Whisk until smooth and creamy. For extra heat, add chili flakes. Remove from heat and let cool.

3. Thread the Skewers:
Carefully thread the marinated chicken pieces onto the soaked skewers.

4. Grill the Skewers:
Heat your grill or grill pan over medium-high until it’s hot and ready for cooking. Grill skewers for 8–10 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.

5. Serve:
Place the skewers on a serving plate. Garnish with chopped cilantro and lime wedges. Serve with the coconut peanut sauce for dipping.
