Creamy Chicken Salad

Creamy Chicken Salad RecipePerfect for sandwiches, wraps, or on its own! Great use for leftover rotisserie chicken.

Ingredients:

3 cups cooked shredded chicken (rotisserie works best)

1/2 cup diced celery

1/2 cup diced red grapes (or halved if large)

1/4 cup finely chopped red onion

1/4 cup chopped fresh parsley (optional, for freshness)

2/3 cup mayonnaise (or Greek yogurt for a lighter option)

1 tablespoon Dijon mustard

1/2 lemon, juiced (about 1 tablespoon)

1 teaspoon honey (optional )

Salt and pepper to taste

A pinch of smoked paprika (optional garnish)

Instructions:

1. In a large mixing bowl, combine the shredded chicken, celery, grapes, onion, and parsley.

2. In a smaller bowl, whisk together the mayonnaise (or yogurt), Dijon mustard, lemon juice, and honey until smooth and creamy.

3. Pour the dressing over the chicken mixture and toss gently to coat everything evenly.

4. Season with salt and pepper to taste. If you like a smoky kick, sprinkle a pinch of smoked paprika on top.

5. Cover and refrigerate for at least 30 minutes to let the flavors meld together.

6. Serve chilled in sandwiches, wraps, or over a bed of greens.
