Greek Chicken Souvlaki Salad

Ingredients:

For the chicken souvlaki:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

For the salad:

  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions:

  1. In a large bowl, combine the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.
  2. Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers.
  3. Grill the chicken for 5-7 minutes per side, or until cooked through and slightly charred. Remove from heat and let rest for a few minutes.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and pepper to make the dressing.
  5. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  6. Remove the chicken from the skewers and arrange on top of the salad. Drizzle with the dressing and toss to combine.
  7. Serve immediately.
