Ingredients:
2 cups graham cracker crumbs
1/2 cup butter, melted
1/4 cup white sugar
2 (8 ounce) packages cream cheese, softened
1 cup white sugar
1 teaspoon vanilla extract
1 pint fresh strawberries, hulled and sliced
2 cups heavy whipping cream
Directions:
In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press into the bottom of a 9-inch springform pan.
In a large bowl, beat the cream cheese and 1 cup of sugar until smooth. Stir in vanilla.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
Arrange half of the sliced strawberries on the graham cracker crust. Spread the cream cheese mixture over the strawberries.
Arrange remaining strawberries on top of the cheesecake.
Chill in the refrigerator for at least 4 hours before serving.
