Ingredients:
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups rolled oats
- 1 cup semisweet chocolate chips
- 1 cup chopped pecans
- 1 cup sweetened flaked coconut
Directions:
- Preheat the oven to 350°F (175°C). Grease cookie sheets or line them with parchment paper.
- In a large bowl, cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking soda, baking powder, and salt; gradually stir into the creamed mixture. Mix in the oats, chocolate chips, pecans, and coconut.
- Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden. Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
