Classic Cowboy Cookies with Oats and Chocolate Chips

Ingredients:

  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup semisweet chocolate chips
  • 1 cup chopped pecans
  • 1 cup sweetened flaked coconut

Directions:

  1. Preheat the oven to 350°F (175°C). Grease cookie sheets or line them with parchment paper.
  2. In a large bowl, cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla.
  3. Combine the flour, baking soda, baking powder, and salt; gradually stir into the creamed mixture. Mix in the oats, chocolate chips, pecans, and coconut.
  4. Drop by rounded spoonfuls onto the prepared cookie sheets.
  5. Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden. Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
